This recipe makes a delicious and nutritious treat that is perfect for any time of day (or night). The spirulina powder adds a pop of color and a healthy boost to the cookies, making them a great and easy way to add more superfoods to your diet.

Maju’s Spirulina Cookie Recipe

Yield: 12-16 cookies

Ingredients:

1/2 cup coconut oil, melted
 

1/2 cup coconut sugar
 

1/4 cup almond milk
 

2 tsp vanilla extract
 

1 egg
 

1 cup all-purpose flour
 

1/4 cup Maju Organic Spirulina Powder

1/2 tsp baking soda
 

1/4 tsp salt
 

1/2 cup dark chocolate chips
 

1/4 cup chopped nuts (optional)

 

Instructions:

Step 1: Preheat your oven to 350°F and line a baking sheet with parchment paper.

 

Step 2: In a large mixing bowl, whisk together the melted coconut oil, coconut sugar, almond milk, vanilla extract, and egg until smooth.

 

Step 3: In a separate mixing bowl, whisk together the all-purpose flour, spirulina powder, baking soda, and salt.

 

Step 4: Pour the dry ingredients into the wet ingredients and mix until just combined. Be careful not to overmix the batter.

 

Step 5: Fold in the dark chocolate chips and chopped nuts, if using.

 

Step 6: Drop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

 

Step 7: Bake for 12-15 minutes, or until the cookies are lightly golden brown and set.

 

Step 8: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
